Our Saperavi grapes are grown in our alluvial/sandy vineyard located in 6- 700 meter's altitude close to the cooling forest. This cool micro-climate produces ripe grapes with high acidity and plenty aromas/flavours. During harvest the grapes were clusterslected, handpicked and carefully transported to the adjacent winery in the cool early hours of the day in late September/early October. After hand sorting the grapes, they were destemmed, crushed and fermented by co-fermenting with ML bacteria and select yeast strains in temperature controlled stainless steel vessels. Frequent delestage during fermentation s took place for 1 months at 20 - 24 degrees Celsius after which the skins were carefully removed in a pneumatic press. The raw wine was then stabilized by cooling for 4 months in a stainless-steel vessel and the final wine was bottled after minimal clarification and filtration.
